Light & Healthy Seafood

This week I decided to expand my culinary skills with a Chefs Inc class. I opted for the "Light and Healthy Seafood" during which I learned to make:

1. Oyster Stew with Saffron and Tomatoes with Grilled Croutons
2. Grilled Scallops with Habanero Garlic Vinaigrette and Mixed Greens
3. Potato and Shrimp Cakes with Whole Grain Mustard Sauce
4. Spicy Ahi Tuna in Cucumber Boats with Toasted Sesame Seeds

If you're looking for a cooking class, I would highly recommend this place as the chefs are extremely informative and helpful! Among the relevant cooking information they shared, I learned a lot of general tidbits that are great for my every day cooking skills

I'm sharing my Spicy Tuna Cucumber boat experience for this blog entry, but will mention that I made the Shrimp and Potato cakes for dinner last night and they were delicious!




After hollowing out cucumber slices with a melon baller, we chopped up a huge piece of Ahi tuna. This fresh piece of fish was incredibly beautiful and "smelled like the ocean." I had to fight every urge not to start sashimi-ing it and devouring it right away. It took a while to scoop out the pieces of meat from between the sinews of the fish, but it was well worth all the effort!

In case cleaning out the fish wasn't hard enough, it took equally long to chop up the tuna into "spicy tuna" texture. But with a little sriracha, chives, and seasoning, we mixed the tuna to the perfect "spicyness" so that it was ready to be topped into the cucumber. We mixed up a little chili sauce and mayo on the side to dollop on top of of the masterpiece and when we were done...

Ta-Dah!

Colonel Guion S. Bluford, Jr.


I had the honor of meeting Dr. Bluford, aka Guy, and think he's kind of inspiring! In case you didn't immediately recognize him, Guy was the first African-American astronaut in space, completing 4 space flights in his lifetime.

Collectively he's logged 688 hours in space. To put this in perspective I'm providing 2 convenient analogies:

1. If you're still a sucker watching Lost, there have been 121 episodes to date. Without commericals this is roughly 100 hours. Imagine watching the entire series to date, 6 times. Guy has spent this much time in space.

2. The typical work week is 40 hours. While you slaved away an entire summer, 4 months, at work, Guy spent this time in space.

Yep - for all those wasted hours, Guy was one-upping you in space...

Escondido Falls

This hidden gem was right off PCH in Malibu. If you take it up near Paradise Cove there's a 2 mile trail off Winding Way road.

The first half was an easy hike, but as I learned the hard way, the second half was one heck of a rock-climb. The trail isn't all that paved, but if you keep climbing and following the water, you'll eventually get to this gorgeous site at the top.

It's alive!

It's alive! It's alive! Yippee! Thank you for your genuine enthusiasm as we embark on the daisykwoh.com-beta phase.

Yep! You heard right - today is Daaaaayyyy ONE and I am super excited to announce I finally have pages on this URL. ::grins::

To kick off this launch I decided to feature a little art project I am working on.
